Turkish Pickling never sounded like the most exciting chilli to grow, but curiosity got the better of me, and I’m glad it did. This is a chilli that surprises.

Easy to grow, productive even outdoors, and incredibly versatile in the kitchen, it has quickly earned its place among my favourites.

The plants are highly adaptable, growing with a neat, semi-ornamental habit that would not look out of place on a patio. They produce a steady stream of yellow-green pods that ripen to red, covering the plant in colour.

The chillies themselves have a sharp, fresh flavour with a surprising amount of heat. The fully ripened red pods develop a sweeter note, making them perfect for a variety of uses.

As the name suggests, Turkish Pickling chillies are perfect for pickling, whether whole or sliced. They hold their crunch well and take on flavours beautifully. If you enjoy making your own pickles, this is an ideal variety to have on hand.

They also work brilliantly in fresh salsas, stews, and sauces, adding a bright, tangy kick to any dish.

Species: Capsicum annuum

Heat Level: Mild to medium – usually around 5,000 to 10,000 Scoville Heat Units (SHU), though some pods carry more bite when fully ripe.

Origin: Turkey. A classic chilli grown for generations specifically for pickling and preserving.

Vigorous Growth: Bushy, compact plants that are highly productive and ideal for pots or raised beds. Regular harvesting encourages heavy cropping.

Fruit Appearance: Glossy green pods that ripen to red. Plump, finger-length chillies with a gentle curve – firm and perfect for preserving whole.

Flavour Profile: Clean, tangy, and slightly grassy when green. Ripened pods become fruitier and more complex. Holds flavour well through pickling.

Uses: Ideal for traditional Turkish-style pickling, but also great grilled, stuffed, or sliced raw into salads. Often fermented for sandwiches or meze.

Growing Conditions: Thrives in warm, sunny conditions with well-drained soil. Responds well to regular watering and light feeding.

1. Easy to Grow: Some chillies are just a joy to grow — compact, reliable, and happy in a pot (5). Others shoot off in all directions or sulk at the first sign of wind (1). I’ve given higher scores to the ones that do well here in the UK.

2. Ornamental Quality: A few of these are real show-offs, with pods that look like jewels or dramatic foliage that turns heads. Others are more practical than pretty. This score is just about how good they look on the patio or in the greenhouse.

3. Heat Level: This isn’t a technical SHU score — it’s just a kitchen-friendly 1 to 5. A 1 means very mild (like a jalapeño), a 5 is properly hot (think Bhut Jolokia). It should help you judge what you’re in for!

4. Hardiness: How well do they cope with our unpredictable summers? I’ve given higher scores to the tough ones that keep going through cool nights, wind, or patchy weather without much fuss.

5. Culinary Use: This one’s about how often I actually use them. Some are perfect for pickling, stuffing or powders — others look good but don’t end up in many meals. If it’s flavourful and versatile, it scores high.
